SUNNY WINES FOR RAINY TIMES! APRIL WINE = FRENCH MEDITERRANEAN

Bastille’s sommeliers, James Lechner, Kristen Young, and Alex Smith are declaring April the month of sunshine wines. This is the second in a series of focused monthly wine features at Bastille—in March the team quietly began the series with a closer look at Pinot Noirs, comparing varieties from Oregon and California. Each month Lechner, Young, and Smith will choose a new region or variety to focus on, and an accompanying variety of wines for guests to experience and learn about.

 

In April they’ll focus on France’s sunniest regions, offering diners a taste of the marvelous French Mediterranean, the warm home to hundreds of spectacular wine producers. They’ll even pop over into the Priorat region in Northern Spain, where there’s a similar wine tradition to that of France’s Sud Oest and Roussillon regions. The wine flights are created to characterize the individual regions, offering the opportunity to compare and contrast them, as well as highlight superstar producers. April showers bring…sunny wines.

 

Three legendary producers will be poured throughout the month: the iconoclast, Domaine Trevallon of Provence, the traditionalist, Domaine Gauby of Roussillon, and the innovator, Alvaro Palacios of Provence.

 

Flights of all three wines are available, with 2 ounce pours of each wine. All the wines are available outside of the flight as well, by the 2.5 ounce taste, 5 ounce glass, or by the bottle. There’s also the option to turn the features into a customized flight. Pricing will vary, but guests can expect about $8 a taste, $16 a glass, and $80 a bottle.

Valentine’s Day at Bastille

 

SEATTLE, January 22, 2013 – Bastille is prepared to meet your mood on Valentine’s Day. Bar manager Erik Carlson has created two distinctive cocktails to fit whichever mood, wine director James Lechner has carefully chosen a few unique bubblies, and chef Jason Stoneburner has come up with a spectacular mollusk-centric menu.

 

Carlson will be pouring his two creations, the “Brown and Bitter,” made with Rye, Cognac, Rhubarb Amaro, Grapefruit Cordial, and Bitters ($11) and, from the opposite end of the spectrum, a “Bright and Bubbly,” made with Gin, Cucumber, Aperol, Lime, and Sparkling Wine ($10.)

 

Aside from the regular wine and cocktail menu, wine director Lecher has chosen a few special sparking wines for the evening. José Michel Champagne will be available for $16/glass, J. Laurens Crémant Brut for $8/glass, and Antech Crémant Brut Rosé for $9/glass. The fabulous Billecart-Salmon Rosé Champagne will also be available for $25/glass and $10/taste.

 

Stoneburner is on a roll with the mollusks in the kitchen, and aside from the regular menu there will be five briny specials:

 

Manila and Varnish Clam Ceviche with Meyer Lemon, Celery Heart, and Piment Fort

Dungeness Crab Salad with Kohlrabi, Watercress, and Lime

Hama Hama Oysters on the Half Shell

Grilled Octopus with Tarbais Beans, Tarragon Vinegar, and Chicory 

Mussels with Lamb Merguez Sausage, Leeks, and Parsley Root

 

The dinner menu will be available from 5:30pm to10pm and the bar will be open from 4:30pm to2am.

MurrayAid Event with House Spirits' Brooke Arthur, Wed, 11.7.12

Bastille’s bar manager, Erik Carlson, welcomes longtime friend and fellow cocktail innovator, Brooke Arthur, back for a second stint behind the bar at Bastille. This dynamic duo, which had cocktail aficionados buzzing when they took over Bastille’s Back Bar in May, will have another go of it on Wednesday, November 7.

 

The festivities will run from 8pm to close in Bastille’s Back Bar and feature $9 cocktails created using House Spirits products. Arthur, a staple on the San Francisco cocktail scene with gigs at Umami, Range, Prospect, and Wing Ho General Store was recognized as one of the San Francisco Chronicle’s 2009 Bar Stars. Arthur recently relocated to Portland and took a job with House Spirits as the Director of on Premise Education and Outreach.

Moules Monday Returns! Beginning Nov 5th

Beginning Monday, November 5 and running through spring, Bastille is bringing back its popular Monday night mussel promotion! Moules Monday features local Mediterranean mussels from Taylor Shellfish Farms, paired with ingredients from the Ballard Farmers Market purveyors and Bastille’s rooftop garden.

Every Monday from 5:30pm – 10pm throughout the restaurant, including both bars and the dining room, guests will have the opportunity to sample chef Jason Stoneburner’s daily market-inspired mussel dish. Guest can also enjoy a lovely Muscadet by the glass for $6. As an added Monday night bonus, Erik Carlson’s happy hour cocktail menu is available from 4:30pm to midnight in the Back Bar.

The preparation will change weekly, but guests can look forward to dishes such as: Moules steamed in Pernod, Confit Garlic, Fines Herbs, and Piment d’ Espelette, Moules with Roasted Anglet Peppers and Celeriac Velouté, Moules with Bacon Maison, Leeks, and Fennel Fronds, Moules Steamed in Rockridge Cider, Apples, Celery Leaves, and Crème Fraîche, Moules Aux Crémant, Moules a la Curry Maison, and Moules Persillade. Cost is $14 per bowl.

Located in Shelton, Washington, Taylor Shellfish Farms has been committed to clean water sustainable growing practice for over 100 years. The Mediterranean mussels are spawned with controlled water temperature in Taylor’s state-of-the-art hatchery. Mussel seed is nurtured with cultivated micro algae until hardy enough to be suspended on mesh ropes from rafts in the nutrient rich waters of South Puget Sound.
